JOB DESCRIPTION: Assists the captain with administration and safety duties, arranges and supervises safety drills. Responsible for all deck operations, water sports and tenders. WORK EXPERIENCE: Wade began his formal culinary training at the age of 17 where he then made the move to Sidney to be chef de partie and then promoted to junior sous chef of Manly Wharf Hotel, a 220-seat fish restaurant in Sydney Harbor. Wade’s passion for travel and cooking drove him further by working in the Australian ski fields and then Val Torrens in the French Alps followed by a stint in London at Le Petit Max with weekends and days off spent working in Michelin star restaurants. Wade’s highlight during this time was working directly with Brett Graham (who now has 2 Michelin Star) at Ledbury. Wade varies his cuisines on seasonal produce, weather, clients’ tastes and current cruising areas. His favorite cuisines include, but are not limited to, French, Italian, Spanish, Japanese (sushi), Thai, Arabic, vegetarian, Mediterranean, gluten free, North African, Balkan, seafood/shellfish, sous vide, Indian, Mexican, gourmet BBQ and modern Australian fusion.

Blake and was the company’s top fishing captain.

Diaan previously worked on a 1944 U-boat chaser that was used in the Canadian Military. Diaan is CARPE DIEM’s youngest crew member and looks forward to a long career in yachting.
