CHEF | VINCENT COSGROVE | AMERICAN
Vincent Cosgrove’s culinary curiosity has taken him from the crab pots of Nantucket Island, to the Latin kitchens of Ibiza, Spain and the grills of Napa, California. Along the way he’s collected hundreds of traditional regional recipes. Vincent looks forward to showcasing the best of a variety of regional cuisines to guests aboard CARPE DIEM II. A Boston Irish native, he started in the restaurant business at the tender age of 13 working as a dishwasher; by age 19 had worked his way up to Executive Chef at Obadiha’s Native Seafood on Nantucket. For health conscious guests, Vincent also offer nutritious, light and flavorful spa style menu items that he created during his tenure at the 5 star Canyon Ranch spa in Arizona.
Loving the energy and atmosphere of the kitchen, Vincent decided to pursue cooking as a career, receiving a culinary degree from Johnson and Wales University in Rhode Island in 1988. Afterward, he began traveling around the United States working at many of the nation’s top restaurants, including New York’s Tribeca Grill, Le Cirque, Vivere, at Gordon’s in Chicago, the Commander's Palace in New Orleans and the Club Car in Nantucket. Through his travels Vincent has found the inspiration to create menus devoted exclusively to traditional regional dishes. One of his favorites is whole roasted sea bass encased in sea salt and fresh herbs.
"If you know what oak does for wine, taste what natural sea salt can do for your freshest catch from the yacht's tender! Or, barley and corn fed organic tenderloin from Painted Hills Farm in the Pacific Northwest rubbed with roasted garlic and rosemary. I like our guests to experience authentic recipes using the freshest ingredients.”
